This isn’t your average couscous salad. Gavin combines fluffy, fragrantly spiced couscous with chickpeas, roasted pumpkin, a touch of sweet apricot and a vibrant green herb and citrus dressing. To finish, it’s sprinkled with crunchy roasted almonds and creamy feta  creating a dish that’s nourishing, satisfying and full of flavour.

It’s wonderfully versatile too. Enjoy it as a quick and healthy lunch for one, or share it as a side with dinner for two. You can warm it gently in the microwave or simply enjoy it at room temperature, either way, it’s bright, balanced and delicious.
